This context has been developed to give students opportunities to explore food cultures, flavours and ingredients, using Belazu as an industry partner. While Belazu is an ingredients company, the context is deliberately open and can be approached in different ways, either through designing complete dishes or by focusing on the development of individual ingredients such as sauces, pastes or marinades.
Students are encouraged to draw inspiration from British food traditions while also exploring and celebrating flavours from the Middle East and Mediterranean. The context lends itself to practical experimentation, taste testing and refinement, allowing students to work iteratively with ingredients and processes rather than producing isolated dishes. Outcomes are therefore likely to vary and may include a full dish, a standalone ingredient, or a small range of related products.
There are also clear opportunities to explore wider themes such as seasonality, food miles, growing methods, packaging and sustainability, alongside sensory analysis and consumer preferences. By working within the context of an ingredients brand, students are challenged to think carefully about purpose, target market and repeatability, reflecting real food industry practice.
